Yes they are oily so you should fillet them (you can leave the skin on) a little salt and pepper and roll them in yellow corn meal, fry in Crisco to golden brown and drain on a paper towel. It is my moms favorite fish to eat. Pro - The pilot house gives you a better option for overnighting on the boat. Other large boats have a cuddy and offer that option but not as spacious as a pilot house.
