Start new game, pick Yellow and then the game will ask whether you want Easy or Normal, just pick whatever, it will then send you to the mode/mission select screen. Also it doesn't matter whether you've been playing with Gold or Yellow mode, the game simply unlocks stuff for you as you beat it.
